This sparkler is 90% Chardonnay and 10% Pinot Noir from
25-50 year old vines planted on Lias clay and Bajocian limestone. It was
fermented 2/3 in barrel and 1/3 in tank with indigenous yeasts before spending
26 months in bottle. It was sent to market with no dosage added and drinks with
such a clean, razor edge this is the definition of mineral. This wine benefits
from being served in a white wine glass, rather than a champagne flute. Clean,
precise aromatics of candied lemon, salty white strawberries, apple slices, wet
stone, light cream and flint. The flavors are vibrant with lemon infused
ginger, Asian pear, wet rocks, dried rose and white raspberry. There is tangy saline
acidity wrapped up in the lovely texture that stretches out into a long finish.
This Cremant de Jura is sure to delight many now and would be a great sparkling
wine to cellar and enjoy over the next 5-10 years.
